Meal Plan Monday May 23rd

Well, this week ends May.  It ends the month long pantry challenge we have had at our house, using up what is in the freezer.  There are a still few odds and ends down there.  We still have plenty of beef and chicken from local farmers.  Next week, starts not only a new month, but also a new start for the farmers markets.  It’s time to start stocking the freezer again!  I can’t wait to start eating great local produce again.  We have a lot of late nights, so I’m pulling out the crockpot and using the grill!

This week we are having….

Monday:  Grilled Chicken, Veggie Kabobs and pineapple (check back for recipe)

Tuesday:  late night at work, errands to run and kiddos to get– on your own night!

Wednesday: Baked Bean Soup (it comes from “Make it Fast, Cook it Slow”) She has a lot of recipes with whole food ingredients that I can get locally.  I can use local carrots, onions, chicken stock (in place of water for more depth of flavor), and tomatoes.  YUM!

Thursday:  Spaghetti and Meatballs (check back for recipe)!  Will be using homemade local sauce, local meat, plus more!

Friday:  Cowboy Beans (also comes from “Make it Fast, Cook it Slow”).  I will be using local ground beef, onion, tomato, roasted red peppers (in place of bell pepper)

Saturday:  Grilled Honey Mustard Fish (check back for recipe)

Sunday:  Grill Night, TBD– I’m going to put something together for the grill. The meat will come from the freezer. Something delcious, but I’m going to wait and see what we are craving!
